Cucumber Jalapeño Margarita

Yum!!!

Serves 1.

2 oz. tequila
1/2 oz. triple sec
2 lemon wedges
2 lime wedges (plus one for garnish)
2 teaspoons sugar
4 slices of cucumber
3 slices jalapeño
coarse sea salt

Instructions

1. Muddle ice, lemon, lime, sugar, jalapeño and cucumber in a pint glass.

2. Add tequila and triple sec, shake with a Boston shaker and pour into a salt rimmed glass.

Spicy Pineapple Margarita

Serves 1.

2 oz. tequila
1 oz. simple syrup
3/4 oz. triple sec
4-5 chunks of fresh pineapple
2 slices jalapeño (red or green)
2/3 of one lime, cut into wedges

Instructions

1. Muddle pineapple, jalapeño, and lime wedges with ice in a pint glass. Add tequila, triple sec, and simple syrup. Shake briskly and garnish with a chunk of pineapple, jalapeño or lime.

Ale and Cheddar Soup

Earlier this week Steve and I took the dogs hiking up on Larch Mountain, just east of Portland in the Columbia River Gorge in the pouring rain just because we were getting antsy sitting around all day. Well it was pouring and it wasn’t particularly cold so we were soaked under our rain gear too. It was a pretty miserable hike and we turned around without completing the loop. On the plus side, we made an amazing Ale and Cheddar Soup from Kevin Lynch over at Closet Cooking, which is one of my new favorite blogs and I have got to share the recipe, so hop on over to his sight and take a look. YUM!!!

Holy Guacamole!!!

This guacamole always disappears…sometimes before dinner is served. It’s perfect for fajita night with a couple of friends or double it up for a fiesta.

Recipe

Serves 3-4.

3 avocadoes, peeled, pitted and cubed
1/2 onion, minced
1 jalapeño, diced
1/2 tomato, finely diced
1/4- 1/3 cup, finely chopped cilantro, plus a couple leaves for garnish
4 garlic cloves, pressed through a garlic press
2 teaspoons lime juice
1/2 teaspoon chili pepper flakes, more to taste
1/4 teaspoon cayenne
salt and pepper

Instructions

1. Combine avocado, tomato, jalapeño, garlic and lime juice. Mash like crazy with a fork or OXO Good Grips Wire Potato Masher.

2. Stir in cilantro, chili pepper flakes, cayenne, salt and pepper. Adjust accordingly. I like a slow burn, so I always heat it up….not enough to make you sweat, but so you definitely know it’s there.

3. Serve with homemade tortilla chips….or store bought if you don’t have time to make your own.
4. Transfer to a fiesta inspired bowl and garnish with cilantro.
